Mixed seafood salad

  • 60
    olive oil
  • 5
    chilli powder
  • juice of a lime or lemon
  • 400
    fresh mixed seafood
  • 20
    bean sprouts
  • 1
    baby red cabbage, finely chopped
  • 1
    cucumber, thinly sliced
  • 1
    each, red and yellow pepper, cut into strips

Mix the oil, chilli powder and lime juice.
Heat the oil mixture in a large frying pan over a high heat and stir-fry the seafood for two minutes or until cooked through.
Arrange the remaining salad ingredients on a platter or in individual bowls and top with the seafood.
Drizzle with the juices left in the pan and season to taste.

Replace the mixed seafood with two thinly sliced chicken breast fillets.
For a fresh herby flavour, add 30 g freshly chopped coriander.
