Ingredients (16)

1.00 bread — French
3.00 garlic — cloves
0.00 oil
0.00 lettuce — head
5.00 baby corn
3.00 courgettes — sliced
250.00 g sweetmilk cheese — diced
10.00 cherry tomatoes — halved
DRESSING
50.00 ml vinegar — tarragon
50.00 ml lemon juice — or lemon vinegar
50.00 ml fresh chillies — 573
50.00 ml oil
1.00 garlic — cloves
5.00 ml mustard — powder
2.00 ml salt
freshly ground black pepper — pinch

Method:

Cut the bread into 1 cm slices.
Fry the bread and garlic in the oil until the bread is pale brown. Drain on paper towelling.
Arrange the lettuce leaves on a salad platter and top with the sweet corn and slices of bread.
Combine the remaining salad ingredients and spoon on top. Finish off with the whole tomatoes.
Blend all the ingredients for the dressing and shake well. Pour over the salad just before serving or serve separately.
