Ingredients (11)

375.00 ml sugar — granulated
250.00 g margarine
30.00 ml golden syrup
1.00 eggs
10.00 ml Bicarbonate of soda
5.00 ml water — cold
500.00 ml flour — cake, sifted
salt — just a pinch
500.00 ml oats
500.00 ml coconut
180.00 ml fruitcake mix — chopped

Method:

1. Melt the sugar, margarine and syrup in a small saucepan until melted; cool slightly. Beat in the egg and add the dissolved bicarbonate of soda.
2. Mix the dry ingredients and chopped fruit together. Add the melted mixture and mix until a stiff dough is formed.
3. Shape into small balls the size of an old 50c coin and press lightly with the back of a fork.
4. Place on lightly greased baking sheets and bake at 180 ºC for 10 to 15 minutes or until golden brown.
