Mixed berries in vanilla rose syrup

Ingredients (6)

1 kg mixed berries — fresh
SYRUP:
1 l water
500 g sugar
1 tsp rose water
1 vanilla — pod
Greek yoghurt — to serve

Method:

Pack the mixed berries into sterilised jars, place the water and sugar in a pot over medium heat, stir until sugar has dissolved. Bring to the boil and boil for 10 minutes, remove from heat and add the rose water and vanilla bean. Allow to cool completely.

Pour syrup over berries into the sterilised jars, covering berries completely. Refrigerate and use within 1 week.

To serve Drizzle over yoghurt.

TIP:

Use fresh or frozen berries, but be sure to defrost frozen berries first.
