PASTRY
210.00 g flour — cake
100.00 g walnuts — finely chopped
60.00 g castor sugar
125.00 g butter
1.00 eggs — large, yolk only
FILLING
100.00 g butter
30.00 g dark chocolate
60.00 ml cocoa powder
7.00 ml nescafé instant coffee granules
165.00 g castor sugar
2.00 eggs — large
20.00 ml milk
SYRUP
0.00 chocolate — curls, to decorate

Method:

1. PASTRY: Place flour, walnuts and sugar in a large bowl. Rub in butter with your fingertips. Add egg yolk and mix. Mix in 30 ml cold water a little at a time to form a firm dough. Cover and refrigerate for 30 minutes.
2. Roll pastry out on a lightly floured surface and line a 26 cm springform pie tin.
3. Put a baking tray in a 180 ¦C oven to heat up.
4. FILLING: Melt butter in a saucepan. Remove from heat and stir in chocolate, cocoa powder and coffee until chocolate has melted.
5. Beat together sugar and eggs until thick and creamy. Beat in milk and syrup. Stir into the chocolate mixture.
6. Pour into pastry shell. Place pie on the hot baking tray and bake for 35 to 40 minutes, or until it sets and a crust forms.
7. When cool, top with grated chocolate or chocolate curls. Serve slices topped with fresh berries and whipped cream or ice cream.
