Minty prawn salad

    lime juice
  • 15
    fish sauce
  • 30
    brown sugar

    garlic cloves, crushed
  • 2
    green chillies, sliced
  • 1
    whole cucumber, grated
  • 4
    green mangoes, peeled and grated
  • 85
    fresh mint leaves, shredded
  • 85
    fresh coriander leaves
  • 2
    ripe mangoes
  • 400
    prawns, cooked and sliced down the middle


Mix together the lime juice, fish sauce, brown sugar, garlic and chillies.
Toss in the cucumber, green mangoes, mint and coriander.
Cut off the plump cheeks of the ripe mango (eat the rest).
Place the mango cheeks in bowls and top with prawns and salad.
Cook's note:
Find green mangoes at Indian supermarkets and spice shops
Tip:Place cubes of feta cheese in a bowl and cover with extra virgin olive oil, lots of mint and roasted sweet peppers.
Chill and serve with crusty bread.
