Minty kebabs

  • 400
    lamb or chicken breast fillet, cut into cubes
  • 200
    semi-dried, pitted prunes
  • 8
    baby onions, halved
  • 30
    olive oil
  • 1
    lemon, the grated zest
  • 60
    freshly chopped mint
  • 250
    Greek yoghurt


25 minutes
Thread the lamb or chicken, prunes and onions onto skewers.
Whisk the olive oil, lemon zest, mint and yoghurt together.
Pour over the kebabs and grill for about 20 minutes or until cooked through.
Serve with seasonal vegetables and baby potatoes.

Instead of kebabs, make a tasty stew. Cook the meat with 250 ml beef stock and the remaining ingredients.
Serve on a bed of couscous or rice, sprinkled with freshly chopped mint.
