Ingredients (10)

440.00 ml fresh lime juice — or fresh lemon juice
15.00 ml Sheridans gelatine — powder
250.00 g sugar
190.00 ml water
30.00 ml vodka — optional
fresh mint — to garnish
sorbet — lemon
CITRUS CONFIT
275.00 g sugar
250.00 ml water
3.00 lemons — or limes, sliced

Method:

Pour 250 ml (1 cup) juice into a bowl. Sprinkle gelatine over and leave until softened, about 5 minutes.
Bring sugar, remaining juice, water and vodka (if using) to boil, stirring until sugar has dissolved. Pour over gelatine mixture and stir.
Pour into a 30 cm or 1 litre (4 cup) terrine mould and refrigerate until set.
CITRUS CONFIT: Combine sugar and water in a small saucepan and bring to boil. Add citrus slices and boil for 10 minutes. Cool.
Unmould terrine onto a platter. Decorate with mint leaves and serve with lemon confit and a scoop of lemon sorbet.
