Mini tomato quiches

    quantity shortcrust pastry

    olive oil
  • 1
    small onion, chopped
  • 2
    cloves garlic, crushed
  • 15
    tomato paste
  • 6
    ripe tomatoes, peeled and chopped
  • 25
    freshly shredded basil
  • 30
    grated pecorino cheese


30 minutes
Roll out pastry and line mini quiche tins or muffin trays. Prick the base of the pastry with a fork and chill. Heat oil and sauté; onion and garlic. Add tomato paste and tomatoes and simmer for about 25 minutes, until thick. Add basil (use 5 ml dried if desired) and salt and freshly ground black pepper, to taste. Set aside to cool. Mix in grated cheese and spoon mixture into prepared pastry cases. Bake in preheated 180 °C oven for 30 minutes.
