250.00 ml water
5.00 ml salt
250.00 ml milk
180.00 g maize meal
30.00 ml butter
1.00 eggs — beaten
1.00 tomatoes — sliced
1.00 onion — small, chopped
40.00 g cheddar cheese — grated
50.00 g anchovy fillets — chopped

Method:

Preheat the oven to 190 ºC (375 ºF). Spray a baking tray with non-stick spray. Bring the water and salt to the boil in a large saucepan. Mix the milk and mealie meal and add to the water once it starts boiling. Stir continuously and simmer for about 10 minutes or until the mealie meal is done. Add the butter and mix. Add a little of the hot mixture to the beaten egg and mix. Add the egg to the mixture in the saucepan and stir well. Simmer for another minute. Rinse another baking tray with iced water. Turn the mealie meal mixture out onto this baking tray and press down to form a layer about 1 cm thick. Leave to cool completely. Cut the mealie meal crust into 6 cm squares and arrange on the prepared baking tray. Arrange the tomato slices on top. Sprinkle the onion and Cheddar cheese on top. Place a piece of anchovy fillet on each square, drizzle with the anchovy oil and sprinkle with a little paprika. Bake for 10-15 minutes or until the cheese has melted. Serve hot.
Makes 16 squares.
