Ingredients (9)

12.00 eggs — large
5.00 ml salt
20.00 ml freshly ground black pepper
15.00 ml fresh chives — or fresh parsley, chopped
100.00 ml cream — or milk
1.00 courgettes — sliced
4.00 brown mushrooms — or button mushrooms, sliced
1.00 red pepper — diced
100.00 g gruyère cheese — Parmesan, Cheddar or feta cheese, grated

Method:

Spray 2 x 12 hollow muffin pans with non-stick cooking spray. Preheat oven to 160 ºC.
Whisk eggs, salt, pepper, herbs and cream or milk in a mixing bowl.
Mix vegetables and arrange a little of the cut vegetables in each muffin pan.
Ladle egg mixture into each pan, level with rim. Sprinkle with cheese. Bake until just set, about 15 minutes.
