Mini chicken Kiev filled with chilli orange butter

    butter, softened
  • 5
    grated orange zest
  • 1
    garlic clove, crushed
  • 5
    seeded and chopped chilli
  • 4
    large chicken breasts, skinned
  • 60
    cake flour, seasoned with salt and pepper
  • 2
    eggs, beaten
  • 125
    dried breadcrumbs
  • oil for shallow-frying


In a bowl, mix butter, orange zest, garlic and chilli. Slit each chicken breast lengthways and place one quarter of the flavoured butter in the pocket. Close. Dip in flour, then in egg and finally in breadcrumbs to coat thoroughly. Chill in fridge for 30 minutes. Heat oil in a non-stick frying pan and fry chicken for 15-20 minutes, turning once, until well-browned. Serve at once with green beans. Serves 4.
