Mini baked Alaskas

  • 6
    chocolate chip cookies
  • 6
    scoops vanilla ice cream
  • 6
    egg whites
  • 170
    castor sugar


Preheat grill. Place biscuits on a baking sheet and drop a scoop of ice cream on each. Freeze. Whisk egg whites and castor sugar in a large bowl until soft peaks form. Remove biscuits from freezer and spread egg whites (meringue) over ice cream, covering all sides completely. Pop under grill until meringue is lightly browned. Serve immediately.
