Ingredients (16)

1.00 onion — finely chopped
oil
500.00 g beef mince
stock cube — chicken
75.00 ml tomato purée
5.00 ml fresh basil
1.00 ml nutmeg — ground
salt and freshly ground black pepper — to taste
1.00 cauliflower — broken into florets
25.00 ml butter
25.00 ml flour — cake
250.00 ml milk — lukewarm
50.00 g cheddar cheese — grated
salt and freshly ground black pepper — to taste
1.00 tomatoes — sliced
breadcrumbs

Method:

Preheat the oven to 180 ºC (350 ºF).
Sauté the onion in a little oil till soft. Add the mince and brown lightly, stirring the mixture continuously with a fork. Add the chicken stock, tomato purée, basil and nutmeg and season to taste with salt and black pepper. Simmer till the mince forms a thickish gravy.
Boil the cauliflower in a little water till just soft. Drain well. Arrange layers of cauliflower and mince in an ovenproof dish.
Prepare a white sauce using the butter, cake flour and milk. Add the Cheddar cheese and season to caste with salt .and pepper. Pour over the cauliflower and mince. Top with tomato slices and a sprinkling of breadcrumbs. Bake for 20 minutes till the breadcrumbs are browned and the dish is heated through.
Serves 6.
