Ingredients (8)

750.00 g beef mince
1.00 onion — finely chopped
200.00 ml breadcrumbs — fresh
30.00 ml Worcestershire sauce
2.00 eggs — extra large, whisked
sea salt and freshly ground black pepper
1.00 green pepper — or red pepper, chopped
160.00 ml sweetcorn — tinned, drained

Method:

Preheat the oven to 160 ºC.
Mix the mince, onion, breadcrumbs, Worcestershire sauce and eggs in a mixing bowl. Season with salt and black pepper.
Place the mince mixture on a large sheet of aluminium foil, shiny side facing up, and shape into a 20 x 30 cm rectangle. Sprinkle the green pepper and sweetcorn on top, leaving a 2 cm edge all around.
Starting at the short side, roll up the mince rectangle. Wrap tightly in the aluminium foil. Place on a baking sheet and bake for 60 minutes or until done.
Remove the aluminium foil and bake for another 15 minutes or until lightly browned. Leave for 15 minutes before slicing.
Serve with rice, mashed potato and gem squashes.
