Ingredients (9)

225.00 g flour — white bread
140.00 g butter
70.00 g castor sugar
1.00 eggs — yolk only
200.00 g fruit mincemeat
2.00 Granny Smith apples — finely chopped
40.00 ml brandy
1.00 eggs — whites only, lightly beaten
icing sugar — for dusting

Method:

Process flour, butter and 50 g castor sugar in a food processor until mixture resembles coarse breadcrumbs.
Add egg yolk and process lightly to form a firm dough. Add a little cold water if necessary.
Wrap dough in plastic wrap and chill for at least an hour.
Roll out the dough and cut out circles to fit a cupcake tin. Place pastry into greased tins.
Mix together the fruit mince, apple, remaining castor sugar and brandy.
Place a spoonful of mixture into each pastry base. Use remaining pastry to cut out lids for the pies or strips to lay across the filling.
Brush with beaten egg white and bake in a preheated 180 ºC oven for 15 minutes or until pastry is golden. Dust mince pies with icing sugar before serving.
