350.00 g flour — cake
60.00 ml icing sugar
200.00 g butter — cold, cubed
1.00 eggs — large, beaten
400.00 g fruit mincemeat
0.00 nuts

Method:

Place flour, icing sugar and a pinch of salt in a food processor and process for a few seconds.
Add the butter and process until mixture resembles coarse breadcrumbs.
Add the egg and 15 to 30 ml cold water, then process until mixture sticks together.
Wrap in plastic wrap and refrigerate for an hour.
Roll out thinly on a lightly floured surface and use a 12,5 cm saucer as a guide to cut out rounds.
Repeat with the remaining pastry.
Press offcuts together and roll out again.
Press pastry carefully into greased muffin tins.
Refrigerate for 15 minuts.
Fill with fruit mince and top with nuts, cherries or crushed shortcake sweets.
Carefully fold the edges of the pastry over the filling.
Brush edges of pastry with egg and bake in a preheated 200 °C oven for 30 minutes.
Allow to cool in the tray before removing.
Dust with icing sugar and serve.
