Mince pies

    beef mince
  • 375
    grated Cheddar cheese
  • 190
    smooth cottage cheese
  • 2
    eggs, lightly whisked
  • salt and freshly ground black pepper to taste
  • 1 packet (400 g) puff pastry, defrosted


Preheat the oven to 200 °C. Lightly grease a baking sheet. Brown the meat in a medium hot dry pan. Pour off excess fat and spoon the meat into a mixing bowl. Add the cheeses and eggs and season the mixture with salt and pepper. Lightly roll out the pastry on a floured surface and cut into 8 squares of 15 x 15 cm. Spoon about 80 ml of the meat onto each pastry square. Moisten the edges of the pastry with water and fold one corner over the filling to make a triangle. Crimp the edges with a fork to seal and arrange the pies on the baking sheet. Bake for about 15 minutes or until golden. Serve with a fresh salad or vegetables.
