0.00 butter — soft
0.00 flour — cake
0.00 salt

Method:

Combine the cream and the soft butter in a wide bowl. Place in the fridge to firm. Sift the flour, salt and castor sugar. Add the flour mixture to the bowl containing the chilled butter mixture. Cut the mixture together with a knife until the mixture resembles fine breadcrumbs. Press into a ball and chill for 20 mins. Here comes the tricky part, this pastry is almost like a rough puff pastry so:Once chilled, remove from the fridge, dust a surface with flour and roll the pastry into a rectangle, fold into three/quarter turn, roll out again and then fold into three again. Place back in the fridge to chill again.
