Mince pie

  • 500
  • salt and freshly ground black pepper

    large, ripe tomatoes
  • 4
    medium-sized potatoes, peeled and sliced
  • 1
    stalk celery, sliced into rings (optional)
  • 1
    large onion, sliced into rings
  • 1
    green pepper, seeded and sliced into strips


Preheat the oven to 180 ºC (350ºF). Spray an ovenproof dish with non-stick spray. Fry the mince in a pan until done and season with salt and pepper to taste. Peel two of the tomatoes and chop finely, add to the mince and simmer until the tomatoes are soft. Spoon half the mince in the bottom of the dish. Slice the other two tomatoes. Arrange half the potato and tomato slices on top of the mince and sprinkle with a little of the celery, onion and green pepper. Season with salt and pepper. Spoon the remaining mince on top, arrange the remaining potato and tomato slices on top and sprinkle with the remaining celery, onion and green pepper. Cover with aluminium foil and bake for 40-60 minutes or until the potato slices are done. Remove the aluminium foil a few minutes before the end of the baking time so the dish can brown on top. Serve with a salad. Serves 4-6.
