Ingredients (13)

60.00 ml olive oil — or sunflower oil
1.00 onion — chopped
1.00 green pepper — chopped
250.00 g mixed vegetables
250.00 g mince
4.00 tomatoes — chopped
2.00 ml fresh thyme
salt and freshly ground black pepper — to taste
CHEESE SAUCE
45.00 ml butter
30.00 ml flour
500.00 ml milk
375.00 ml cheddar cheese — grated
250.00 g lasagne sheets

Method:

Heat oil in a heavy-based pot. Sauté onion and green pepper until tender.
Add mixed vegetables and cook until tender.
Add minced meat and fry until browned. Add the chopped tomatoes, thyme, salt and pepper, and simmer for 5 minutes.
Grease a large square or rectangular ovenproof dish. Fill in layers, starting with noodles, top with mince mixture, then the cheese sauce. Repeat layers, ending with cheese sauce.
Sprinkle grated cheese on top. Cook lasagne in a preheated oven at 180 ºC for 30 minutes or until bubbling and cheese has melted.
CHEESE SAUCE:
Melt butter and stir in flour. Cook for 1 minute.
Add milk, stir until thickened.
Remove from heat, add half the cheese, mix until smooth.
