Ingredients (12)

1.00 stock cube — beef
400.00 g beef mince
300.00 g ham — diced
60.00 g cheddar cheese — diced
1.00 onion — diced, fried
2.00 eggs — lightly beaten
30.00 ml flour — cake
5.00 ml fresh basil
5.00 ml fresh thyme
freshly ground black pepper — to taste
15.00 ml tomato purée
200.00 g broccoli — florets

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a large ring mould with non-stick spray. Prepare beef stock by dissolving the stock cube in 100 ml boiling water. Cool. Mix together the remaining ingredients, except the broccoli. Add the cooled beef stock and mix well with a fork. Divide the mixture in half and firmly press one half into the prepared ring mould. Sprinkle with the broccoli florets and spoon the remaining mince mixture on top, pressing it firmly into the mould. Bake for 40-50 minutes or until the mince is cooked and the ring feels firm. Turn out onto a pretty serving platter and serve with a meat or mushroom sauce.
