Mince Pies

    red glacé cherries, quartered

    fruit mince

Preheat the oven to 200°C and lightly grease a baking sheet. Mix the cherries and fruit mince in a mixing bowl. Divide the marzipan into 30 pieces and roll each piece into a small ball.

Cut out 12 squares of 7 cm each from the pastry. Cut out the middle section of 6 squares, leaving a 1 cm edge all around. Place the 6 whole squares on the prepared baking sheet.

Whisk together the egg yolk and water and brush the edges of the -squares. Place the 6 pastry frames on top, pressing the edges together lightly. Spoon the mince in the middle of the pies and top with about 5 marzipan balls.

Cut out 6 star shapes from the leftover pastry and place on top of the pies. Brush lightly with the egg mixture. Bake the pies for 15-20 minutes or until puffed out and golden brown.
