Milky tapioca pudding

  • 500 ml milk
  • 1 cinnamon stick
  • 1 vanilla pod, split in half
  • zest of 1 orange
  • 85 ml tapioca
  • 2 egg yolks
  • 85 ml sugar
  • fresh berries and clotted cream, to serve


Combine milk, cinnamon stick, vanilla pod and orange zest in a pot.
Bring to the boil. Put tapioca in a separate bowl.
Slowly pour the hot milk mixture over the tapioca.
In a separate bowl, whisk together egg yolks and sugar.
Pour the hot tapioca mixture over the egg mixture and stir together.
Pour back into the pot and place over medium heat.
Bring to the boil, reduce to simmer and cook for 1 minute, continuing to stir.
Pour the pudding into a serving dish and chill for 2 hours.
Serve with fresh berries and thick clotted cream.
