Ingredients (9)

500.00 ml milk
1.00 cinnamon — stick
2.00 naartjies — peel only
65.00 g sugar
40.00 g flour — cake
15.00 g butter
2.00 eggs — large
300.00 g puff pastry
0.00 cinnamon — ground

Method:

Heat the oven to 240 ºC.
Place milk, cinnamon stick and naartjie peel in a saucepan and heat gently until steam begins to rise from the milk.
Remove from the heat and take out the cinnamon stick and peel.

Mix together the sugar, flour and a little of the hot milk in a small bowl until smooth. Pour back into the milk and stir well.

Return to the heat and cook, stirring, until thickened. Remove from the heat and stir in the butter.
Set aside to cool, then stir in the beaten eggs.

Line a greased pie dish with puff pastry. Pour in the milk mixture.
Sprinkle with cinnamon and bake in preheated oven for 10 minutes, then reduce heat to 180 ºC and bake for a further 10 to 15 minutes, until the filling is set and the pastry is puffed and golden.
