Microwaved fudge

  • 500
    icing sugar
  • 60
    cocoa powder
  • 60
  • 5
    vanilla essence
  • pinch salt
  • 110

Grease a shallow 23 x 13 cm pan with butter or margarine.
Sift the icing sugar and cocoa powder together in a 2-litre ovenproof glass jug or bowl.
Add the remaining ingredients in the order listed.
Microwave the mixture for 2 minutes on 100 per cent power.
Stir well and microwave again for 1 minute on 100 per cent power.
Stir once more and microwave for another 30 sdeconds on 100 per cent power.
Beat the mixture well with a wooden spoon until slightly thickened and pour into the greased pan.
Cool slightly, draw patterns with a fork on top of the fudge and leave to cool until firm.
Cut into squares and chill in the pan.
Turn out and neaten.
