Micro potjiekos

  • 4
    chicken thighs, skin removed
  • 6
    medium carrots, peeled
  • 2
    potatoes, peeled and halved
  • 1
    packet chicken noodle soup powder
  • 375
    boiling water
  • 250
    frozen peas
  • 250
    frozen mealies
  • 2
    gem squashes, halved and depipped


Place chicken on the base of a 2,5 litre glass bowl. Arrange carrots and potatoes on top and sprinkle with chicken noodle soup. Pour over boiling water, cover and microwave for 15 minutes on 100 per cent power. Add peas, mealies and squashes and microwave for another 10 minutes.
