Mexican meat tortillas

  • 400
    spicy beef sausages
  • 10
    sunflower oil
  • 2
    medium onions
  • 1
    clove garlic
  • 2
    fresh chillies
  • 2
    ground cumin
  • 125
    freshly chopped coriander
  • 10
    dried crushed chillies
  • 400
    Cheddar cheese
  • avocado pear or guacamole
  • tortillas or nacho chips


20 minutes
Squeeze the sausage meat out of the casings.
Heat oil in a large frying pan. Add sausage meat and fry over medium heat, stirring to break up the meat. Add onion, garlic, fresh chillies and cumin and fry until meat is cooked (about 10 minutes).
Mix in half the coriander and season to taste with salt and freshly ground black pepper.
Mix together remaining coriander, dried chillies and grated cheese.
Spoon sausage mixture into a greased casserole dish and sprinkle with the cheese mixture. Bake in preheated oven for 10 to 15 minutes, until cheese has just melted.
Spoon mixture into warm tortillas and top with avo. This filling is also great served with nachos and guacamole on the side.
