Mexican avocado and papaya salad

    fresh lemon juice

    olive oil
  • freshly ground black pepper
  • salt
  • 2
    avocados, peeled, stoned and sliced
  • 1
    ripe papaya or pawpaw, peeled, seeded and sliced
  • 1
    small lettuce, washed and dried


Combine the lemon juice and olive oil. Season to taste and whisk well. Arrange avocado, papaya and lettuce leaves on four individual serving plates. Pour over dressing and serve immediately. Serves 4.
