Meringue treats

    slices white bread (or any available bread)
  • 60
    apricot jam
  • 1
    egg white
  • 30
  • few drops almond essence to taste

    finely chopped nuts

Preheat the oven to 180 ºC (350 ºF) and spray a baking sheet with non-stick spray or spread with margarine. Trim the crusts of the bread or cut each into triangles. Spread the triangles with the jam, but not all the way to the edges, otherwise it will run out during baking. Whisk the egg white until soft peaks are formed, and gradually add the sugar while beating continuously. Add the almond essence and nuts and fold in gently. Spoon this mixture on top of the triangles and bake for 15-20 minutes or until the meringue is pale brown and the bread crisp and golden brown. Remove from the oven and serve hot or cold. Makes 12 triangles.
