Meringue and fruit pudding

    mango or peach slices, apricot or guava halves
  • 200
    g
    ginger biscuits, coarsely crushed
  • 3
    large egg whites
  • 175
    g
    castor sugar
 

Method

Preheat oven to 190 ºC. Place the canned fruit and juice in a greased ovenproof dish. Sprinkle with crushed biscuits. Beat egg whites until stiff. Add castor sugar a little at a time, beating well after each addition. Spoon on to biscuits and bake for 10-12 minutes until meringue is golden. Serve hot. Serves 6-8.
