Ingredients (4)

420.00 g mango — peach or apricot or guava
200.00 g ginger biscuits — crushed
3.00 eggs — large, whites only
175.00 g castor sugar

Method:

Preheat oven to 190 ºC. Place the canned fruit and juice in a greased ovenproof dish. Sprinkle with crushed biscuits. Beat egg whites until stiff. Add castor sugar a little at a time, beating well after each addition. Spoon on to biscuits and bake for 10-12 minutes until meringue is golden. Serve hot. Serves 6-8.
