Melon salad with bacon and avocado

    ripe avocados
  • 1
    juice and rind of a lemon
  • 350
    melon, skinned, seeded and sliced
  • 90
    olive oil
  • 250
    back bacon, coarsely chopped
  • handful basil leaves, finely shredded


Quarter, skin and slice the avocados. Blend the lemon juice and rind and sprinkle over the avocado slices. Arrange the avocado and melon slices on a serving platter or four individual plates. Heat 30 ml (2 T) olive oil and fry the bacon until crisp. Remove from the pan, cool slightly and sprinkle over the melon and avocado. Mix the basil with the remaining olive oil and season generously with salt and pepper. Drizzle over the salad. Serves 4.
