Melon granita

    ripe sweet melons (spanspek)
  • 1
    large lemon (juice only)
  • 65
    castor sugar
  • 15
    finely grated orange rind
  • fresh strawberries, to garnish
  • wafer biscuits


Peel melons and remove seeds. Cut into chunks and blend in a food processor until smooth. Stir the lemon juice and sugar together until the sugar has dissolved. Mix with the melon and add the orange rind. Pour the mixture into 2 freezer containers and freeze until almost solid. Remove from the freezer and break up using a fork. Place a little at a time into the food processor and blend briefly to break up. Return to the containers and refreeze until needed. Decorate with strawberry halves and serve with dessert biscuits. Serves 10-12.
