Melon and ginger granita

  • 500
    Green winter melon or Gallia melon chunks
  • 15
    Fresh lime or lemon juice
  • 375
    Ginger beer
  • 5
    Freshly grated ginger


Peel and de-dip melon. Cut into chunks and place in a blender with lime juice and ginger bee. Whizz to purée.

Pour into a metal container (a roasting pan is perfect) and freeze for three hours. Remove from freezer and mash with a fork or whiz in a blender until coarsely crushed. Return to freezer for another 3 hours.

Crush again and spoon into liqueur or martini glasses. Serve with a teaspoon and a splash of chilled vodka (optional).
