Melba sauce

  • 250
    fresh or frozen berries
  • 30
    berry liqueur or brandy (optional)
  • 30
    sifted icing sugar (use more or less, to taste)


Purée the berries with the liqueur or brandy (if using) in a food processor until smooth.
Sweeten by stirring in icing sugar to taste.
Chill until ready to serve and serve with ice cream, mousse and with sweet pies and tarts.
