Ingredients (14)

500.00 g courgettes — baby, trimmed
250.00 g baby onions — peeled
250.00 g mushrooms
MARINADE
100.00 ml vinegar — balsamic
3.00 lemon — juice only
300.00 ml fresh chillies — 573
10.00 ml fresh thyme — chopped
30.00 ml fresh Italian parsley — chopped
3.00 garlic — cloves, sliced
4.00 bay leaves
3.00 celery stalks — chopped
10.00 green olives
410.00 g butter beans — tinned and drained
salt and freshly ground black pepper

Method:

MARINADE: Mix all ingredients.
Blanch prepared vegetables in boiling water for a minute or two, then immerse in cold water for about 5 minutes.
Toss vegetables in marinade, cool and transfer to a large bowl. Cover and refrigerate for a few days to allow flavour to develop.
Drizzle with olive oil, if desired, and serve with crusty bread.
