Mediterranean tortillas

  • 1
    carrot, scraped and chopped
  • 200
    cauliflower florets
  • 200
    chopped tomatoes
  • 420
    (1 can) butter beans, drained
  • salt and freshly ground black pepper
  • 60
    baby spinach
  • handful fresh basil leaves
  • 3
    flour tortillas


Steam the carrot and cauliflower until done and drain to remove any excess water.
Add the tomatoes and beans, bring to the boil and simmer for another 5 minutes or until the mixture is fragrant and has reduced.
Season with salt and pepper.
Add the spinach and basil and heat until the leaves have wilted.
Spoon the mixture into the tortillas and serve immediately.
