Mediterranean crostini

    x 425 g can butter beans, drained and well-rinsed
  • 60
    olive oil
  • 15
    lemon juice
  • 1
    chopped garlic clove
  • salt and freshly ground black pepper
  • 15
    olive oil
  • 10
    pitted, chopped olives
  • 2
    finely chopped celery stalks
  • 12
    slices french bread
  • salt and pepper to taste


Drain the butter beans and rinse well.
Process with 60 ml olive oil, lemon juice and garlic, salt and pepper to form a purée.
In another bowl, mix 15 ml olive oil, chopped olives and celery stalks.
Drizzle the French bread with olive oil and spoon dollops of bean purée and the olive mixture on top.
Season with salt and pepper and serve.
