Ingredients (10)

45.00 ml fresh chillies — 573
1.00 onion — small, thinly sliced
400.00 g chicken breast fillets
2.00 garlic — cloves, chopped
1.00 red pepper — small, cored, deseeded and thinly sliced
400.00 g tomatoes — chopped
4.00 sun-dried tomatoes — thinly sliced
50.00 g olives — black, pitted and halved
salt and freshly ground black pepper — to taste
30.00 ml fresh basil — chopped

Method:

1. Slice chicken breasts diagonally into thin slices. Heat oil in heavy-based pan and fry onion, garlic and chicken over a medium heat, stirring occasionally until chicken is sealed.
2. Add the peppers, and cook for 4 minutes, stirring occasionally.
3. Add the chopped tomatoes, sun-dried tomatoes, olives and seasoning. Cover and cook for 5 minutes.
4. Stir in the basil and adjust seasoning. Serve with steamed rice or crusty bread.
