Mediterranean chicken

    olive oil

    small onion, thinly sliced
  • 400
    chicken breast fillets
  • 2
    cloves garlic, chopped
  • 1
    small red pepper, cored, seeded and thinly sliced

    chopped tomatoes
  • 4
    sun-dried tomatoes, thinly sliced
  • 50
    black olives, halved and stoned
  • salt and pepper to taste

    fresh basil, chopped


1. Slice chicken breasts diagonally into thin slices. Heat oil in heavy-based pan and fry onion, garlic and chicken over a medium heat, stirring occasionally until chicken is sealed. 2. Add the peppers, and cook for 4 minutes, stirring occasionally. 3. Add the chopped tomatoes, sun-dried tomatoes, olives and seasoning. Cover and cook for 5 minutes. 4. Stir in the basil and adjust seasoning. Serve with steamed rice or crusty bread.
