Ingredients (8)

1.00 kg calamari — rings, frozen
45.00 ml olive oil
6.00 garlic — cloves, crushed
45.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
65.00 ml wine — white
black olives
cherry tomatoes

Method:

Pat the calamari rings dry. Heat a third of the oil in a heavy-based saucepan.
Sauté; two cloves of garlic until fragrant and add a third of the calamari. Sprinkle with 15 ml (1 T) parsley and stir-fry for about 1 1/2 minutes until just done. Pour over 15 ml (1 T) white wine, stir-fry until most of the wine has evaporated and transfer the calamari and pan juices to a large dish. Repeat twice more with the remaining ingredients. Lightly mix everything together.
Mix the calamari rings with black olives and cherry tomatoes to taste and divide between four serving plates.
Serve immediately or cool and serve with crusty bread.
Serves 4 as a light meal.
