Ingredients (23)

CREAMY TOMATO SAUCE
375.00 ml cream — fresh
15.00 ml butter
dried basil — pinch
2.00 ml Bicarbonate of soda
30.00 ml tomato paste
5.00 ml white sugar
salt — to taste
MEALIE MEAL STRIPS
250.00 ml maize meal — porridge, cooked
5.00 ml oil
5.00 ml lemon juice
4.00 eggs — small
oil — or butter, for frying
MEAT
750.00 g beef — topside, cubed
1.00 garlic — small cloves, crushed
3.00 sheep's brain
salt and freshly ground black pepper — to taste
50.00 ml stock — meat
75.00 g red pepper — sliced
75.00 g onion — diced
75.00 g celery stalks — chopped
cheddar cheese — grated with crushed corn chips
300.00 g samp — cooked
15.00 ml butter

Method:

Mix all the ingredients for the tomato sauce together and heat slowly until warmed through. Set aside.
Mix all the ingredients for the maize meal strips together. Heat a little butter or oil in a skottel braai and drop small quantities of the batter in the skottel braai. Cook till air bubbles form on top, turn over and fry until pale brown, as you would for crumpets. Remove from the pan and cut into strips.
Stir-fry the meat, brains and garlic in the same skottel until done. Season to taste with salt and black pepper. Add extra oil and the meat stock, if necessary. Mash the brains with a fork and move the meat to the outer edge of the skottel. Stir-fry the vegetables untill done but still crisp, add the meat and maize strips and mix. Heat for about a minute before adding the tomato sauce. Mix well.
Mix the maize rice with the butter and spoon into a greased flat dish. Spoon the meat mixture on top, sprinkle with the cheese and heat over boiling water which has been added to the skottel. Serve with finely crushed corn bites.
