Ingredients (10)

250.00 ml maize meal
250.00 ml flour — cake
5.00 ml salt
2.00 ml mustard — powder
2.00 ml cayenne pepper
15.00 ml Baking powder
250.00 ml cheddar cheese — grated
1.00 eggs — extra-large, whisked
oil — for deep frying

Method:

Mix the mealie porridge, cake flour, salt, mustard powder, cayenne pepper, baking powder and cheese in a mixing bowl. Add the whisked egg and a little milk if the dough is too stiff.
Heat oil for deep-frying in a heavy-bottomed saucepan. Drop spoonfuls of the batter into the hot oil. Fry until golden brown on the outside and drain on paper towelling.
Sprinkle with braai spice and parsley while the puffs are still hot. (To make bite-sized fritters, drop the batter into the oil using a teaspoon.)
Serve hot.
Makes about 10 fairly large puffs.
