Ingredients (8)

2.00 eggs — extra-large
250.00 ml maize meal
450.00 ml flour — cake
10.00 ml Baking powder
salt — pinch
milk
oil — for deep frying
cinnamon — sugar

Method:

Whisk the eggs in a mixing bowl and stir in the mealie porridge. Add the cake flour, baking powder and salt. Mix well. Add the milk to form a fairly slack batter.
Heat oil for deep-fat frying in a heavy-bottomed saucepan. Drop spoonfuls of the batter into the hot oil. Fry until golden brown on the outside. Drain on paper towelling. (To make bite-sized fritters, drop the batter into the oil using a teaspoon.) Sprinkle the fritters with cinnamon sugar while still hot.
Serve hot.
Makes about 10 fairly large fritters.
