Ingredients (5)

500.00 ml maize meal
500.00 ml water
5.00 ml salt
250.00 g bacon — rashers
oil — for frying

Method:

Blend the mealie meal with a little water. Bring the remaining water and salt to the boil. Add the mealie meal, stirring continuously until the mixture comes to the boil. Simmer for about 10-15 minutes or until done, taking care not to burn the porridge. Cool.
Roll the porridge into boiled egg-size oval shapes. Wrap each oval in two or three rashers bacon and secure with a cocktail stick.
Fry the ovals in preheated oil until the bacon is crisp.
Serve hot with tomato and onion mix. Alternatively, arrange the ovals in an ovenproof dish, pour over the tomato and onion mix and bake slowly until the bacon is done. Serve as side dish with meat.
Makes 10 ovals.
