Mashed potatoes with roasted garlic

Preheat the oven to 200ºC. Place the cloves of garlic on a double layer of heavy-duty aluminium foil and wrap well. Place the parcel in the middle of the oven and bake for 45 minutes until soft. Open the parcel and cool slightly. Boil the potatoes in lightly salted water until tender. Drain and transfer to a mixing bowl. Add the butter and a little milk. Mash with a potato masher to make soft mashed potatoes. Remove the ends of the cloves of garlic and press out the garlic purée. Add to the mashed potatoes and mix well. Serves 4.
