8.00 garlic — cloves, unpeeled
1.00 kg potatoes — peeled and cubed
45.00 ml butter
190.00 ml milk

Method:

Preheat the oven to 200 ºC. Wrap the cloves of garlic in a double layer of aluminium foil and place in the centre of the oven. Bake for about 45 minutes or until the garlic is very soft. Unwrap and leave to cool slightly. Meanwhile cook the potatoes in lightly salted water until soft. Drain and transfer to a mixing bowl. Add the butter and milk and mash with a potato masher. Cut off the tips of the cloves of garlic and squeeze out the purée. Add to the mashed potato and mix well.
Serves 4-6.
