Ingredients (11)

1.00 kg chicken — pieces
10.00 ml masala
5.00 ml cumin — ground
5.00 ml coriander — ground
5.00 ml turmeric
15.00 ml garlic — cloves, crushed
15.00 ml fresh ginger — grated
1.00 green chillies — finely chopped
salt and freshly ground black pepper — to taste
30.00 ml vegetable oil
80.00 ml vegetable oil

Method:

1. Trim chicken pieces. Mix together spices, garlic, ginger chilli, salt and pepper.
2. Add oil and mix to a paste. Rub paste onto chicken and leave for 1 hour.
3. Place chicken in baking tray, baste with oil and roast at 180 ºC for 45 minutes or until chicken is cooked.
4. Serve on a platter with tomatoes and lemon wedges.
