Mas de Torrent (chicken with prunes)

    olive oil

    sprigs rosemary

    fat cloves garlic
  • 6
    large chicken thighs, boned and rolled
  • 24
    whole small onions
  • 18
    whole small potatoes, peeled
  • 200
    chicken stock
  • 100
    orange juice
  • 24
    prunes, washed well and soaked overnight in weak tea


Heat olive oil, rosemary and garlic in a large pan, add rolled chicken and sauté until golden. Add onions, potatoes and chicken stock and simmer for 30 to 40 minutes. Add orange juice, prunes and tea in which prunes were soaked and simmer for about 20 minutes.
