Ingredients (12)

50.00 g butter
30.00 ml golden syrup
15.00 ml brown sugar — soft
6.00 pears — peeled, cored and quartered
30.00 ml marmalade — bitter
5.00 ml mixed spice — ground
2.00 ml ginger — ground
1.00 lemon — juice only
1.00 orange — juice only
175.00 ml cream
10.00 ml castor sugar
1.00 eggs — large, whites only

Method:

Melt butter in a large, heavy-based frying pan. Add syrup, sugar and pears and cook until the pears are caramelised on both sides.
Add marmalade and spices and boil quickly until the sauce turns brown. Remove pears with a slotted spoon and put in a heat-resistant dish.
Pour the lemon and orange juice into the sauce and mix well. Pour over the pears and cool.
Whip cream and castor sugar together until thick. Whip egg white in a separate bowl until stiff. Fold into the whipped cream.
Just before serving, arrange pear and toffee sauce in a serving dish and top with cream.
