Ingredients (11)

200.00 g patty pans — yellow, quartered
8.00 courgettes — trimmed
410.00 g artichokes — tinned, drained and quartered
410.00 g butter beans — tinned and drained
200.00 g feta cheese — cubed
15.00 ml french mustard
2.00 garlic — cloves, crushed
15.00 ml honey
50.00 ml lemon juice
125.00 ml fresh chillies — 573
50.00 ml fresh herbs — chopped

Method:

Bring saucepan of water to the boil. Add the patty pans and boil for one minute. Drain and refresh with cold water.
Use a vegetable peeler to peel courgettes into thin strips lengthways.
Mix together patty pans, courgette strips, artichokes, butter beans and feta in a large bowl.
HERB DRESSING:
Mix together mustard, garlic, honey and lemon juice. Whisk in oil. Add herbs and pour over salad ingredients.
Toss to coat, then refrigerate and allow to marinate for at least one hour before serving.
